The surface acts almost like non-stick in the clean-up process and is resistant to scratching or chipping. Heat conduction is even and efficient. The "ear" handles make this dish easy to remove from the oven and carry to the table. The added depth makes this dish particularly useful for roasting and avoiding splattering in the oven.
